Peri peri chicken

A bit of advice if you would ladies and gents.

One of my fav recipies is this one but as you will see there is a lot of olive oil in the marinade.

Makes 4.

4 Chicken breast (skinless)

For the marinade

60ml olive oil
30ml red wine vinagar
1tblspn origano
1 garlic clove crushed.
1/2 tsp smoked paprikka
2tsp black peppercorns crushed

Combind the marinade ingredents.
Add the chicken and marinade for at least 2hrs longer if you can.
Remove chicken and bake or grill until cooked.

I normally serve it with Meditarnian veg cooked useing spray oil and either a baked potatoe or new pots.

My delhema with this as I said earlier is the amount of oil in the marinade :eek:. As you take the chicken out and then bake it do you think it's O.K.?? And how would you count the oil?:confused:

If your grilling it then I'd say the oil isn't needed? Try replacing it with a drop of water? I doubt it'll taste much different!!

Just realised I forgot to say 1 chopped chilli (or 1tsp crushed dried chilli)..Helps in Peri Peri !!!
