Finally got around to making homemade ice cream with 0% fat greek yogurt tonight. Really impressed - lovely and rich, soft and creamy and 1PP per 75g or free on SF. This little lot was 2PP with the amaretti biscuits :)

Hi pastagirl, I used pretty much a whole big tub of 0% fat total greek yogurt, added sweetener to taste (i use splenda) and 1/2 tsp of vanilla paste. I then mashed a 150g punnet of strawberries with a fork, added juice of 1/4 of a lemon and a little bit of grated zest, mixed this into the yogurt and then put into my ice cream maker which I had frozen in the freezer for 24 hours. It was ready to eat in about 15 minutes.

Mix it up put in freezer! Ur meant to mix with an electric whisk ever 2 hours until frozen but I stirred mine with a spoon was a little icy but lovely! Takes like 9 hours in the freezer tho! So put it in in the morning!

Yeah, what Sarah said! But whisking it a couple of times either with an electric mixer or put in the blender really will helo remove the ice crystals and make it much smoother and more creamy. Although ice cream makers are ace. I have had mine for 11 years and it was only about £20, definitely worth looking into getting one if you like your ice cream.
