Just fry off your veg and prawns and bung them in a dish. Beat the eggs and season with salt and pepper then pour over the other ingredients. Top with sliced tomatoes and grated cheese then bake in the oven for 35-45 minutes. Adding chilli to the veg would be good if you have some.
