Quick and Easy Recipies for lunch/Dinner

Hi Everyone,

Has anyone got some good quick and easy recipies? The problem I have is that I work in an office and do long hours, so by the time I get home I can't be bothered to cook anything If Its going to take 45mins+!

I'm trying to make enough to have left overs for the next day for lunch but wanted to know if anyone had any good quick recipie ideas that are low in syn value?

Something I make quite a lot of is pasta with a really quick creamy tomato and vegetable sauce. It's completely Syn free and in total takes about 10 minutes to make! Plus, you can make it in batches so that it will last you a few days. Here's what I do:

- In a pan, start some pasta off to boil.
- In a seperate frying pan, with FryLight, fry off some mushrooms, mixed peppers and red onion.
- When the vegetables look as though they are cooked, add 1/2 tin of chopped tomatoes. Give the mixture a good stir and let it simmer.
- Once the pasta is cooked, take off the heat and drain. Also take the vegetable sauce off the heat.
- Add 1tbsp Quark to the vegetable sauce and stir well.
- Top the pasta with the sauce and enjoy, guilt free

You could also add chicken/quorn to the sauce at the frying stage for something extra. I also add chilli flakes and garlic just for extra flavour.

That's really helpful, I can alway pick up a tub of quark on the way home if i don't have any in the house. I suppose its about getting into good habits as well, so hopefully it'll start to become second nature!

I always have gammon sw chips and mushy peas for a quick meal its all free and peas are super speed for wieght loss or i do the chicken tikka season ur chicken from the night b4 and u could have a cooked curry in 25 mins.

Also, if you like curry, have you tried the Mushy Pea Curry? It's free on plan and super speedy for your weight loss!

It's really quick to make, here's how I do it:
* In a pan with some FryLight, fry off some chicken pieces, onions, mushrooms, peppers and any other veg. you like.
* To the pan, add 1 can of chopped tomatoes, 1 can of mushy peas and as much curry powder as you like (depending on how mild/hot you like it)
* Stir well and let the mixture simmer.

I have to admit, it really doesn't look very pleasant, but it tastes gorgeous! To me it tastes just like chip shop curry! And you can't taste the mushy peas at all, they just add to the texture.

Some people blitz the curry so that it's smooth, but I prefer to leave mine that bit thicker. I also tend to add a coconut mullerlight to the sauce, once taken off the heat, to make it taste just like a korma! :drool:

It's gorgeous served with rice, slimming world chips, on top of a jacket potato, etc. Really quick and tasty!

Wow, I'm loving the recipie ideas. Never even though of using things like Coconut muller lights! lol

Just went out with a client for lunch and tried so hard to stick to the syn free stuff. I had roast cicken without the skin, a tiny bit of gravey, potatoes without butter and veg. The veg had butter in. How many sysn do you think that would of been? :S

Hi everyone...after a year and a half i'm back...a stone and a half heavier! oh dear!!

I'm starting to learn lots of quick and easy recipes. I made a pasta bake for dinner which was amazing and took less than 10 min prep

Tuna and Sweetcorn pasta bake - Syn free on Extra Easy

300g dry pasta
tin of chopped tomatoes
1 carton of passata
1 large onion
1 large tin of sweetcorn
2 tins of tuna
4 slices of cheese (using each slice per portion as a HEA)
fry light
italian herbs

method
boil the pasta for 8 minutes
chop up onion and fry with fry light
once the pasta is drained, put the cheese to one side, then add all the ingredients together and mix
put into a casserole dish and layer the cheese on top.

cook in the oven at 200 degrees for 20-25 mins or till cheese has gone golden brown. Serve with salad or veg to have your 3rd super free

Hi,

You have some amazingly good ideas! Can I ask - does the yogurt (or the quark from your pasta recipe) tend to split at all? I'm going to give both of them a go
