Mixed bean chilli!
You can buy a tin of mixed beans for about 45p, a tin of chopped toms for 30p (value ones), an onion, a chilli or some chilli flakes and a stock cube and there you go!! That would make 2 or 3 portions for a pound!
How about mini quiches made with bacon, onion and beaten eggs. Mix all the ingredients together and then poor the mixture into muffin or yorkie pud tins and then bake in the oven at 200 degrees until cooked.
These are ideal for red day/EE packed lunch or snacks.
warm the milk,whisk the eggs vanilla and sweetener.
pour the warm milk onto the egg mixture, stiring as you go.
pour into ramekins or tea cups and sprinkle with nutmeg.
bake in a pan of water in the oven at 150*c for about 30 mins until just set

Chickpea falafels
1 Tin Chickpeas
1/2 red onion
1 grated carrot
1 garlic clove
1tsp each coriander and cumin
Basmati rice to serve
Drain chickpeas, place in food processor with onion carrot garlic and spices. Blend until mixed.
Shape into patties and cook in frying pan sprayed with frylight for 4-5 mins each side.
Serve will boiled rice (and if you still have some money left over, mix a bit of natural yogurt with chopped mint)
