Red cabbage ideas?

There is a recipe in the SW Christmas book. It's braised with onion, nutmeg and apple. Makes a huge pan full but it freezes very well. Not at home at moment so will post recipe ASAP.
 
Pete’s Sweet & Sour red cabbage (2013)

Makes 10 portions

Ingredients

1 Medium/large red cabbage (s) (sff)
1 tbsp. caraway seeds
1 tbsp. cornflower (3.5 syn)
3 cloves
3 tbsp. soft brown sugar (9syn)
4 tbsp. vinegar
50g butter (14 syn)
300ml water
large cooking apple (1.5 syn)
S & P

Method
Wash & cut the cabbage into fine shreds.
Melt the butter in a deep saucepan, add cabbage & fry briskly, stir in the sugar, caraway seeds & cloves, reduce the heat.
Mix the cornflower with the vinegar to a smooth paste, add water & pour over the cabbage
Cook, stirring until the mixture comes to the boil & thickens, season to taste.
Reduce the heat to a simmer, cover & cook for at least 1 hr., stirring from time to time.

Makes us about 10 portions for 2 people.
 
1.13kg red cabbage
2 red onions
Salt& freshly ground black pepper
1 tsp ground nutmeg
3 tbsp red wine vinegar
2 pink skinned eating apples
Juice of 1/2 lemon
3/4 tbsp sweetener

Remove coarse stem and any old leaves and finely shred cabbage.
In large pan layer cabbage with sliced onions seasoning each layer with s&p and nutmeg.
Add vinegar and cover with tight lid. Low heat for 45 min.
Stir occasionally and add a little water if drying out. Cut apple and remove core, slice thinly and toss on lemon juice.
Lay on top of cabbage and cook a further 25 min until tender.
Gently mix apples into cabbage and add sweetener.
Serves 8 1/2 sin per serving
 
personally I do as above ingredients - no butter - mix match to taste and throw all in slow cooker !! its easy and no messing - smells lovely also
