I am on an extra easy day today and was planning on using ricotta as a HEXB.
I can't see this in the easy extra book though.
Does anyone know if I can do this?

I use riccotta loads on my green days. Great with spinach for a veggie lasagne and easy to put in cooked pasta for lunch box.
