I'm a greedy piggy for pancakes too - we have them once a year and I go for it big time. Thankfully it's on a WI day so I have all week to undo the damage ;-)

God, I'm so stupid sometimes. I just read this and thought 'oh, I wonder what day it falls on this year, it might be my WI night too' .......... mine is a Monday!!!!!!!

The syn free pancakes are great as long as u get them thin enough...first attempted resulted in a sweet omelette for me haha
