Stoved Sausages and Spuds

2 onions, sliced thickly
450g 95% fat free sausages, cut into pieces
750g canned or cooked potatoes
300ml hot chicken stock
25g half fat cheddar cheese, finely grated
Salt and pepper

Dry fry the onions and sausages in a flameproof frying pan for 4-5 minutes or until lightly browned. Use a slotted spoon to transfer 2 tablespoons of onion to saucer. Transfer remaining sausage mixture to a bowl.
Slice the potatoes and arrange half of them in the bottom of the pan. Season and top with sausage mixture, pour on the stock and then top with remaining potatoes, scatter with reserved onions and cheese.
Cover and cook gently for 15 minutes, then grill for 4-5 minutes until the onions are crisp and cheese is bubbling, serve.

Vegetarian
Use Quorn sausages, vegetable stock and vegetarian cheese. [/FONT]
