Stuffed Aubergine

free on green days plus 1hxa ( if u wanted to add extra cheese u can syn it)

ingredients

1 aubergine
83g minced QOURN
150g plum tomatoes, skinned, deseeded and chopped
1 green/red pepper, deseeded and chopped finely
1 small onion, chopped finely
2 cloves of garlic, chopped
grated cheese from hxa
salt and black pepper

method
F / gas Mark 4.C / 350Preheat the oven to 180
Cut the aubergine in half lengthways and scrape out the flesh, leaving the skin as a shell. Reserve the flesh and finely chop.
Spray frylite into a non stick pan and cook the qourn mince then add the aubergine flesh and the other vegetables. Cook for further 15 minutes or until the mince in cooked and the vegetables are soft. Season to taste.
Place the aubergine shells onto a baking sheet and fill with the mince and vegetable mix. Cover with cheese and bake for 20 minutes
