Stuffed Shrooms

Sorry, me again! Am planning on doing stuffed mushrooms for hubby to be on Monday, but no idea what to stuff them with? Any suggestions? I don't think he would handle cottage cheese, but he won't have had his hexa in the day so can use cheese on/in it. Just wondered what successes other members have had?

I've used veggie mince in a fairly dry tomato sauce before- could probably use real meat if you prefer! And then cheese on top- blue cheese works nicely

Mix some spinach with low fat soft cheese an top with some scan bran for crunch or home made bread crumbs. I would be naughty an mix in a small amount of Stilton or Gorgonzola.
