I sort of adapted this from the Aubergine Dahl recipe, and Dort took some to work where it received rave reviews so I thought I'd share

Ingredients

Carton Passata
1 Stock cube
3 tsp each of ground cumin, ground coriander, turmeric and ground ginger
1/2 punnet mushrooms chopped
1 Large Courgette chopped
1 tsp sweetener
1 Cube crushed chilli (optional)
2 Large onions chopped
2 cubes Frozen garlic
1 cube frozen ginger
3 tsp Jeera (cumin seeds)
2 tsp Black mustard seeds (or normal if you can't find them)
1 tsp Garam Masala
Chicken thighs roasted and roughly chopped (or roasted veggies)


Empty the Passata into a saucepan, fill the carton 3/4 with water and add to the pan with the stock cube add the courgette, mushrooms, sweetener and cube of chilli if using.
Bring to boil and simmer gently until mushrooms and courgette are cooked.
Meanwhile spray a frying pan with Frylight, add the onion, Cumin seeds, Mustard seeds, and fry over a medium heat until onions are soft and the mustard seeds have popped.
Add the onions to the tomato mixture along with the chicken or veggies.

BTW if you use chicken it really does taste better to add the roasted thighs.
