Syn value of cooked minced beef?

According to the food optimising book, beef mince with a syn value of less than 12% fat is 2.5 syns per 100g. Is this raw weight? When I cook mince I always dry fry it and drain off all the fat first. Would it still be 2.5 syns then, even without all the fat? I would've assumed it would be free then as I've removed all the fat, but would be grateful if anyone knows the answer! Thanks.
 
Yes that's the raw weight and yes you DO still have to syn it at that rate. Its impossible to get all the fat out, that is the syn value. You need to get extra lean (<5% fat) if you want it to be free.
