the food you are eating sounds perfect!! I cant see any problems with it anyway! I do find it hard to fit exercise in even though both my kids are in school, there always seems to be something that needs doing!! Then by night time i feel too tired, like you hopefully in another while i will find some energy!!

I too am bad for carbs but i am also not keen on veg, so i never know what to have, so if you have any idea feel free to tell me :D !!

You sound very positive, thats the main thing!!
 
It does sound to me like you are doing everything right... But other 'diets' i have been on and a general view is not to eat a larger meal for your dinner and have the larger meal for lunch, therefor you burn it off, rather than go to bed on it, if that makes sense? Worth a try x
