Spanish omelette! Made this for the first time last night and it is lovely cold today! Just thinly slice a big potato, fry it in fry light with a chopped onion and some garlic on a low heat for 5 mins (you're looking to cook it but not brown it!), then add 4 beaten eggs, salt and pepper, and pour on top of the potato and onions in your frying pan.... Cook on a low heat for 5 mins, then flip it over (using a plate on top of the pan) and cook for a further 5 mins....
Lovely cut into wedges and served cold! xx
