whats for lunch

Ooh that sounds nice! How do you make that? x

There's a few different versions but mine is-
finely chop 2 onions, 1 courgette, 2 peppers, handful of mushrooms and 2-3 garlic cloves.
Fry light in a big saucepan and cook veg for a few mins till soft.
Add salt, pepper, smoked paprika and cayenne pepper to taste.
Add a tin of chopped tomatoes and a tin of baked beans and bring to boil.
Layer in a dish with lasagne sheets, tightly cover with foil and bake in oven, 220c for 30mins
Remove foil and sprinkle cheese over the top ( allow a hex a amount per person ) and back in oven for 5mins.

I usually cut this into quarters and the two of us have a quarter each with a big salad so there's some left for lunches x

I like the sound of this :) adding lasagne sheets and cayenne pepper to my shopping list for later...

Ham, onion and cheese (A) omelette witth salad and low calorie coleslaw (2)
ML Greek style lemon yoghurt (0.5) - Love these!
 
Leftover Spicy Spaghetti Bolognese with a side serving of cauliflower, followed by a fat-free raspberry yogurt - was absolutely delicious.
 
Chicken breast, baked potato topped with kerry low low, jalapenos and some cherry tomatoes xx

Having fried egg in a ww petite pain with a slice of burger cheese yum yum... will also have two babybel lights to make up the rest of my HEA and an orange to follow
 
Think I'm going to have the weetabix I wasn't hungry for this morning!
