whats for lunch

Mega salad so yummy! Who said salads are boring :)

For lunch today I have had Mackerel in Tomato Sauce with a 1/3 packet of Ainsley Harriott spicy cous cous (0.5 syns). I had this with lettuce, tomato, cucumber, gherkin, spring onion, orange pepper and boiled egg with a splash of Tesco light choices french dressing which is syn free.

Never in a million years did I think I would like tinned Mackerel but I really enjoyed it! x
 
Salad for me too!

Consists of:
Lettuce
Spring Onions
Beetroot
Red Pepper
Silverskin pickled onions
Red onions
2 boiled eggs
28g grated cheddar (HexA)
and 2 syns worth of extra light salad cream.

Timtim, what coleslaw is that and how many syns? I love shop bought coleslaw but thought they were all too high.

Hey it's home made really simple and nice! I actually like it better than shop bought now!

1/2 white cabbage thinly cut
1 onion thinly cut
2/3 grated Carrots
Mix all together with fat free yoghurt not to much just enough that it sticks and then add some low fat mayo (I used hellmans extra low 1/2 syn per table spoon) and half a lemon juice and salt and pepper to Taste and that's it! Makes loads as well and keeps in the fridge for a good few days :) sometimes I add hea of cheese as well that's lovely too!
The portion I have there I counted as 1 syn to be safe :) x

Looks yummy! Well done on your weightloss. I'm 5"7 too and my goal weight is 10 stone and people think that's too little but you're nearly 9 stone and you look fab :) Any before/after pics?

Wow okay! Sounds good. The ones I've made have always tasted a bit too yogurty if you know what I mean? Will have to try this. Liz x

Yeah I've made it before and it's too yoghurty! I don't use as much now just enough to stick together think the lemon juice picks it up as well :)
