which potatoes are best for sw chips?

overworked underpaid mum!
just wondered what everyones fav's are after discovering vivaldi potatoes make the most perfect chips! and does anyone have any tips on crisping them up a bit? for the first week mine were all burnt or anemic looking. what's everyone's idea of the perfect sw chips?
 
I always use baking pot's, par boil for 10 mins, add 1 tsp of oil (2 syns) and bake on a mesh tray for 25 mins. They always come out really lovely and crisp with a fluffy centre.
