3 red or yellow peppers, sliced
1 chilli - de-seeded and diced
1 onion diced
1 vegetable stock cube
1 tin chopped tomatoes
1garlic clove crushed
1 tsp dried basil
3/4 pint water
spray oil
spray saucepan and gently fry onion. add chopped peppers, chilli and garlic, cook for 5 mins approx. then add tinned chopped tomatoes, basil, water and stock cube. cook until peppers are soft. remove a tablespoon of ingredients from the pan, then blitz the rest. return the rest to the pan and mix
