made my first ever soup the other day and used:

1 butternutt squash (the hardest darn thing ive ever tried to cut up lol) peeled,deseeded and sliced into cubes.
1 onion chopped into chunks.
1 red pepper, chopped and deseeded.
black pepper, chilli powder and chilli flakes to taste.

i found a bowl of this very filling and my one batch made 4 generous servings of soup.

have a look at my diary, asked myself for some recipes and there have been a put on over the last few days that you might fancy trying :)

Hi girls I make soup every week as I am only on 18/19 points so it really helps!

My zero point cockaleekie

Chicken stock
Leeks
Garlic
Onion

Sweat the veg in sliced garlic cloves with fry light for 10 mins. Add chicken stock and bring to boil. Then simmer for as long as you can on low heat. Blend and your done! YUM

Spicy Minestrone
1 can of chopped tomatoes
chicken or veg stock
2 tablespoons of Tomato Puree
Carrots
2 or 3 cloves of garlic minced.
Crushed or fresh chilli
2 large onions
Fresh or dried mixed herbs
Salt and Pepper
Some green beans

Blend - Yummy!

forgot to say add chicken stock (i used 1ltr of chicken oxo) to the soup ...doh!
