american style pancakes

These are yummy warm from the pan with a banana and some frozen raspberries or if you are feeling naughty nutella! Ok so, this recipe makes 12 decent size pancakes. It works out at 3PP for 2 pancakes.

Recipe:


  • 135g SR flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons caster sugar
  • 130ml skimmed milk
  • 1 egg, beaten
  • a slug of olive oil

Method:



  • Mix flour, baking soda, salt and sugar with a wooden spoon.
  • mix oil, milk and egg in measuring jug.
  • combine with dry ingredients slowly.
  • The batter will be thick and gloopy!
  • Turn on frying pan to medium (don't use anything in the pan they will burn if cooked with oil/butter, remember the recipe has oil in it)
  • Use a ladle to blob in 2 pancakes
  • Cook for 30 seconds on one side then flip over using a pallette knife and cook until golden.
  • Keep cooking in batches of 2, they will keep in an airtight container for 4 days and can be reheated in toaster!
 
O yummy! Made these today for me and the family ... had them plain (filled my biscuity craving). Really nice. Could imagine theyd go nicely with the free banana 'ice cream' that theres a recipie for on this site too. Thanks again.
