I'm itching to start running, although I am on 810 atm so think I might be okay to start training now. At my heaviest it would have been too much for my knees.

How about moving up to 810/SS+ for the days you are gymming as you will (hopefully) burn more calories than the meal is taking in, but your blood sugar will remain stable?
