bacon, chilli and lemon kedgeree

I was reading my magazines and came across a few recipes that can be used as sw ones! Hope you like!

Bacon, chilli and lemon Kedgeree

Serves 2

125g long grain rice
4 sliced spring onions
1 deseeded chilli
100g chopped smoked bacon
1tbsp mild curry powder
juice of half a lemon.

Put rice on to boil,
meanwhile "fry" spring onions, chilli and bacon until bacon is cooked, add the curry powder and cook for a further minute, add the rice and lemon juice to the pan and combine.
If wanted add halved boiled eggs on top!

Spaghetti Frittata
Serves 6 (roughly half hexb per serving)

1 onion finely chopped,
1 carrot " "
500g lean mince
400g sieved tomatoes,
300g dried spaghetti,
4 large eggs,
4tbsp chopped flat leaf parsley
100g freshly grated parmesan cheese

preheat oven to 180c,

fry the onions and carrot for 5 mins, add the beef and cook until colored all over
pour in tomatoes, season and continue to cook on a medium heat for 10 mins, stirring occasionally
Meanwhile cook the pasta in a large salted pan of boiling water. Drain and add to the meat sauce. Stir well and leave to cool.
Break the eggs into a saucepan with the pasta, add the parsley and cheese and mix well.
Transfer to a greased baking dish and cook for 20 mins until golden. Serve hot or cold with a lovely side salad!

Mixed mushroom frittata


Free on EE
"Fry" 2 handfuls of mushrooms with thyme for 2 mins,
Stir in juice of half a lemon,
pour in 3 beaten eggs and some watercress,
fry for 3 mins and then grill until firm!
