Does anyone have a nice easy Atkins induction beef curry recipe?

Tried searching but it's taking me to the beginning of threads and will take ages to trawl!

Can't say for certain that it is induction-friendly, but I invented this which might be adaptable:

Butter/coconut oil in frying-pan.

Add any combination you like/can have of mushrooms, onion and garlic (asafetida if you can't have garlic?)

When cooked, add 1/2 pack Tesco beef strips (makes quite a bit for one)

Melt 1/2 a 50g packet of creamed coconut in about 40ml boiling water and add to pan BEFORE beef is cooked through (otherwise beef will be like old boots by the time it's done).

Stir in 1tsp garam masala, 1tsp turmeric, chili powder and salt to taste.

Keep stirring and allow to reduce down until sauce is sticky.

It doesn't look great, but tastes nice!

I usually add either cashew nuts or cashew nut butter towards the end, but I think they're not induction friendly?

You could add any pre-cooked veg you want at the same time as the coconut, I expect.

Serve over riced cauliflower.

Hope that's some help.
