Best low carb/nutritionally dense veggies for soup?

Hi all

Im not strictly on atkins anymore(lost 3 and a half stone on it though) but try to a follow a low carb/paleo where possible diet. I am going to be making chicken soup tonight. I usually make it with Anthony Warrel thomson yeast free organic stock cubes, chicken breasts, onions, cabbage, celery, green beans and carrots(not many). Flavoured with garlic and bay leaves. I really like the taste of it n im sure its pretty healthy but I was wondering if anybody has any good ideas for veggies that I can use for soup, that go well in soup and are as nutritionally dense as possible?

Also suggestions/recipes for soup welcome, I love to try new kinds. I pretty much live on soup lol

It's medium - I wouldn't advise eating much of it if you're keeping your carbs low. I love celeriac made into oven chips, cauliflower with cheese sauce, spinach is very nutritious, so is cabbage. Aubergine is another good one and courgette is a miracle vegetable - try it as noodles!
