Butterbean Crumble

Butterbean and Ratatouille Crumble
8points per serving / Serves 4

400g tin of butterbeans
2 similar size tins of ratatouille
25g sundried tomatos (not in oil), chopped
1 tsp herbes de Provence
1 tsp smoked paprika
150g wholemeal flour
75g 1/2fat butter
1 tsp garlic purée
75g rolled oats
50g gruyere cheese, grated

Preheat your oven to gas mark 4 / 180C/ fan 160C. Place your flour in bowl and rub in butter until resembles breadcrumbs, stir in the purée, oats and cheese.

Mix the beans with the ratatouille, sundried tomatoes, herbs and paprika and place in an ovenproof pie dish (around 1l)

Sprinkle crumble topping over the top, place on baking tray and bake for 35-40mins or until crumble starts to brown and filling is hot.

..this is nice without the cheese - i'm too poor to afford gruyere haha.. but still really tasty :)
