I made this last night and it was delicious, the kids loved it too, so I thought I would share.
Olive oil
1 onion
2-3 cloves of garlic crushed
1 chilli, chopped
chicken pieces, any
1 red pepper
2 tsps cajun spice
2 sticks of celery
1 tin tomatoes
Heat oil in dish, fry onion, garlic and chilli 2-3 mins.
Add chicken and red pepper and cook for another 5 mins.
Add remaining ingredients. Cook and cover on medium/low heat for 1-1 1/2 hours (I'm sure it doesn't actually need this long, but I did do it.
It was a bit spicy for the kids so I added some plain yoghurt.
Total recipe according to the yoghurt and the 3 chicken breasts I used was 15. We had with rice.
