Carbs -Confused

I have never tried to cut down on carbs before, but was reading a magazine yesterday where someone said usually on a diet bread and potatoes are usually the first carbs cut out when dieting.
So is bread and potatoes high carbs, and what else should I be looking to cut down on, carb wise, to lose weight?
I have tried Slimfast for the 3rd time and it just doesn't agree with my tummy at all, so am now looking at the carb thing after reading the article in the magazine yesterday.
I eat loads of fruit and veg, and chicken and fish but don't eat any red meat at all, and I want to lose a stone, don't know if that might be helpful:D
