Carrot & Butterbean Soup

Roughly chop:

3 white or red onions
approx 8 carrots
4 sticks of celery
1 large sweet potato
1 tin of butterbeans

Put into large pot with a few squirts of Spraylight & saute for 10 mins to release natural sugars (helps with flavouring)
Dissolve 2 vegi stock cubes in 1 litre of boiling water & add to vegetables
Cook for approx 30 mins, or until vegi's softened & add butterbeans
Blend to your own consistency & season
