Cheesy Garlic and Bacon Stuffed Chicken


Desperate to be slim!
Made this for dinner as an experiment a few days ago and it was lush. Even my OH loved it!!!

2 chicken breasts
6 x LC Extra lights (1/2 HEXA each)
4 rashers of bacon
Garlic powder
Dried herbs (I used basil, but you could use any type)

1: Chop the bacon into small pieces and fry in frylight.
2: In a bowl, mix together the cheese, herbs and garlic, then add the cooked bacon pieces.
3: Butterfly and bash the chicken breasts (Good video here) I used a saucepan as I don't have a mallet!
4: Spread one side of the chicken with half of the cheese mix, and then roll it up, making sure all the cheese is trapped inside.
5: Thread the breast onto a skewer at the top edge, or use cocktail sticks to hold it together in the oven.
6: Repeat for breast 2.
7: Pop on a foil lined baking tray in a hot oven (about 240, as I made it with chips as well) and cover with foil. Cooked in about 20 mins or so, and lovely and moist.

This sounds much more complicated than it is when I write it down!!!

I quite like to use Quark instead of LC, which is free, with some spring onions aswell!

When I made the Kiev, which calls for Quark, my OH said that it didn't have enough "ooze" and was a little dry... that's why I used LC this time, and it was much better.
Even if you don't use the LC's as a HEXA, they are only half a syn, so 1.5 per serving for yummy ooze-y kievs!!!

I've made this one but used light mozzarella (HEA) to stuff it. It's lush!
