Red Day Chicken Provencal

Veganism isn't a diet.
This is my version of Chicken Provencal.
Free on a Red day.



Ingredients:

Half of a large onion
One 400g can of tomatoes
Two cloves of garlic
Tbsp of basil
2 large chicken breasts

Method:

Warm up oven.
Dice onions and fry ( I don't add anything to fry except maybe a spoonful of water for moisture).
Add the crushed garlic to the onions.
Cut the chicken into inch sized cubes
Add tomatoes to a casserole dish and chop tomatoes if whole.
Add the basil to the casserole dish.
When onions and garlic are done, as you like (I cook for about 10 mins) add to the casserole dish and mix.
Fry the chicken (again I don't add anything, just cook in it's own liquid it creates).
If having potatoes with the meal they should go on to boil now.
When the chicken is cooked add to the casserole dish and cover. Put into the oven.
I leave in the oven for about 30-35 minutes. By this time the potatoes are usually ready.

I tend to serve with boiled potatoes (HeB) and green beans ( a nice touch of colour to the dish). A very easy and cheap recipe I think and ideal for experimenting with :D

When my daughter makes this she cooks on the stove and uses lemon juice.
