chicken recipe ideas please to go with...

cauliflour/carrot cheese (leftover from yesterday).

We've got chicken thighs but don't want just boring roasted in oven. How can I spice it up a bit or make it more interesting to accompany the above?

When i made this a while ago i just threw what ever veg i had in the fridge into it.
Or you could try making the KFC chicken. hope that helps you
