Chicken sofrito recipe

Slimming World Chicken Sofrito

Ingredients
2 cloves of garlic
400g can of tomatoes
25g of cooked ham, cut into strips
1/4 teaspoon of salt
75g green pepper, deseeded & chopped
175ml of chicken stock
85g/3oz onion, chopped
40g of mushrooms
1 level tsp oregano
Pinch paprika pepper
250g chicken bressts, skinned, boned & cut into 11/2 cm strips

Method
1. Place all the ingredients, except chicken, in a pan. Mix well and cook gently for 15 minutes, stirring occasionally
2. Add the chicken and continue to cook until chicken is cooked throughly and the sauce thickens. Serve with a selection of Free vegetables.
