Chickpea curry query?

Does anyone have a nice recipe?

Can it be frozen?
 
I can't be specific on a recipe as I don't follow one when I make it. I usually bung in some tinned chickpeas, tinned tomatoes, onion, mushrooms, bit of garlic, indian spice mix (I have a few in the cupboard that I get from the shops) or sometimes curry paste instead, lentils or split peas and just let it simmer away. I add spices according to my taste buds - sometimes a bit of trial and error and it does freeze well :)
 
Hi, this is my recipe for a spicy bean dish.

Chop three stalks celery
Chop one whole pepper
Chop one large onion
Chop 150 g mixed fine beans, mange tout, baby sweetcorn. ( or just add 150g frozen mixed veg)
Chop 3 cloves garlic and an inch of fresh ginger.
Put all the above in a pot with a stock cube and a tin of chopped tomatoes with another tin full of water.
Add half tsp chilli flakes or to your own taste but be careful they will be hot.
Bring all this to the boil and simmer for 20-30 mins till veg are as tender as you like. I like them crunchy.
Then add two drained tins of beans( I use one chick pea and one mixed beans)
Also add juice of half lemon and two- three dessert spoons of creme fraiche.

This makes three large portions of a one pot meal. It will keep well in the fridge for 3-5 days. It's so quick to make and keeps well in the fridge that I never need to freeze it
Its very GL friendly and is low cal at about 290 cals per portion.
If you prefer , divide this into four portions and serve with brown rice.
