I'm doing extra easy so I sometimes have mine mixed with meat.

Cut up some vegetables in chunks and roast in the oven, then add to the cous cous.

Add salad to it and have it cold.

Add a little curry powder to give it a little kick.

Hopefully someone else will have more ideas.
