Have you tried roasting, peppers, onions and cherry toms and adding this to the cous cous with a squeeze of lemon.

i havent but it sounds lovely
think i shall need to experiment with wet veggies n see what i come up with
You can make your cous cous wetter by adding more water or adding flavour and using stock.

Also what the previous poster said, try roasting some veggies in the oven with a small amount of olive oil salt and pepper or a drizzle of balsamic vinegar and then adding this to the cous cous. Delicious x
I burn off the skin of a yellow pepper on the hob and then chop up the sweet flesh with some finely chopped spring onions, cucumber and peas with some chilli and black pepper. Its lovely and sweet.
