Yummy proper custard! This is a Delia recipe I adapted.

4 egg yolks
Splenda
Vanilla essence
250ml Double cream

Beat yolks splenda and essence together

Heat the cream on a gentle heat to almost boiling then a TINY bit at a time add the hot cream to the eggs with one hand while continuously stirring with the other. (if you add it too quick the eggs will scramble..you want to bring them gradually to temperature)

Immediately transfer the mixture back into the saucepan and return to gentle heat stirring continuously until desired texture.
Warning..it's gets thick very quick!!

Very very yum!! I had it with stewed rhubarb.
 
I poured it over a slice of 'Swiss roll' yesterday...very luscious :))
