Dinkie Dawnies Dubious Diary of Downsizing, Deflation, and Debauchery

That looks amazing. My daughter loves Indian food and that could be a slimming winner for her. Where can I get the book as I don't go to class and it looks an awful lot to ask you to post the recipes.

It's no problem hunni! They're all very simple recipes...

Aloo Gobi

Fry light
1 onion, peeled and finely chopped
2 tsp cumin seeds
2 large potatoes, peeled and cut into bite sized cubes
1 head of cauliflower, separated into bite sized florets
1 tsp mild or medium chilli powder
1/2 tsp turmeric
2 tsp ground coriander
2 tsp garam masala
2 tsp amchoor (dried mango powder) - I didn't use this
Salt
Chopped coriander and mint to serve

Spray a large non-stick wok with fry light and place over medium heat. Add onion and stir-fry for 4-5 mins. Add cumin seeds and stir-fry for a further 2-3 mins.

Add potatoes & cauliflower & stir-fry over a high heat for 4-5 mins. Add chilli powder, turmeric, ground coriander, garam masala & amchoor & stir-fry for 2-3 mins.

Pour in 200ml water & season well. Cover & cook gently for 10-15 mins, or until veg are tender. Season to taste.

Remove from heat and garnish with chopped herbs.


Spinach & sweet potato curry

300 ml veg stock
750g sweet potatoes, peeled & cut into bite sized wedges.
1 onion, peeled, halved & thinly sliced.
225g baby leaf spinach (I used frozen)
2 garlic cloves, peeled and thinly sliced
1 red chilli, deseeded & thinly sliced
1 tbsp medium or hot curry powder
4 ripe plum tomatoes (I used tinned)
Salt & freshly ground black pepper

Place the stock in a large saucepan & add the sweet potatoes & onions. Bring to the boil, reduce the heat, cover & cook gently for 4-5 mins.

Add the spinach, garlic, red chilli, curry powder & tomatoes to the pan, stir well & cook over a medium heat for 10 mins or until the spinach has just wilted & the potatoes are tender. Season well & serve not.

Bombay Potatoes
Free on EE & green.

1 tsp black mustard seeds
1 tsp ground cumin
1 tsp turmeric
1 tsp ground coriander
1 tsp garam masala
1 tsp chilli powder
2 tsp peeled & finely chopped root ginger
6 medium potatoes, peeled, par boiled & cut into cubes
4 tomatoes, cores removed & flesh diced
4 tbsp chopped coriander

Spray a large non stick pan with fry light. Place over a medium heat & fry the mustard seeds, ground cumin, turmeric, ground coriander, garam masala, chilli powder & ginger for a few mins.

Add the potatoes, making sure they are completely coated in the spicy mixture.

Stir-fry for about 10-15 mins, then stir in the tomatoes & coriander. Cook for 1-2 mins & remove from the heat. Serve immediately.

Lentil dahl - not from the book.
Free on EE & green

2 tbsp water
2 medium onions, chopped
2 cloves garlic, chopped
1 tbsp coriander powder
1 tsp ground ginger
1 tsp ground turmeric
2 tsp ground cumin
1/2 tsp chilli powder & 1 whole chilli
2 bay leaves
2 inch cinnamon stick
1/2 tsp salt
6 black peppercorns
8oz/225g red lentils
1 1/2 pt boiling vegetable stock

Put the first 8 ingredients in a large bowl & microwave for 4 minutes, stirring once.

Add remaining ingredients & stir. Cook for 10 mins, stir, cook for 5-8 mins. Season with salt & pepper, & more chilli if required.

I usually throw in some frozen spinach with mine as its a bit more sf!

Late again lol!

Didn't really do a lot today but it still feels like I haven't sat down all day!

I did go shopping for some SW bits though. My consultant has asked me to make some carrot cakes for the group to try tomorrow so I needed some carrots lol! And somehow I came out £50 lighter! And I didn't make the cakes as I decided to cook a SW shepherds pie for tea instead. And then I made a very NON SW cake for Gwyn and the kids. It was from Mary Berrys book and included courgettes! And I'm afraid I HAD to try it, twice, and it was luverly!!!

Well I'm really pleased to report a loss of a pound tonight! I really thought a STS would've been a decent result bearing in mind I had 3 days off plan, so it's no wonder I'm chuffed with a small loss! It was nice actually as I took Gwyn with me tonight so he could see what we get up to at group, and he really enjoyed it! We were at a new venue so he was busy blowing up balloons and putting up signs so the members knew where to go.

Had a lovely morning getting my nails and eye lashes done, and a few other bits. Then I spent the afternoon making the low syn carrot cakes for my SW group to try.

And now I'm curled up on the sofa with hubbs, just watched master chef. Go Janet lol!

Just get a muffin or cup cake tin and line with ham or bacon. Break an egg into each one, sprinkle a hexA of cheese (if required) over the top and also some salt and pepper. Pop in a medium oven (I have a fan oven and use 180) for about 15 mins or until eggs have set. They're nice hot or cold, and surprisingly filling. And totally free if u don't use the cheese xxx

OMG wish I'd read this before I made an omelette (which I haven't enjoyed) they sound yummy. Not sure why I don't like omelettes cause I love everything made with eggs but for some reason my omelettes are horrible not sure what I do wrong :-(

Absolutely love breakfast muffins, but seem to have forgotten about them lately, so thanks for reminding me about them!

Thanks :) I made some this morning but also added chopped tomato, mushroom and courgette. Think that made then slightly wetter but they smell amazing mmm
