Debs well worth it - really tasty (I used loads of black pepper and rather than leave the garlic whole, i grated and mixed over veg, little sprinkle of chilli flakes) could eat this all over again right now!
 
spanish chicken looks lovely I am wondering if I can substitute quorn fillets but I dont think it would work as no juices
might chuck some mushrooms in to make the juices - but I will cook it for DH at some stage
well done on the walking :)
what about if you cooked in actifry with 1tbsp oil? the recipe does call for oil but I just used a bit of fry light, it was so tasty and tasted like a million calories

glad you are feeling good - did you get an increase in the meds you are taking or do you think the walking is helping you - I know the walking helps me enormously

no increase - same dosage but if things start to go wrong I must see gp immediately and dosage will be increased

just had words with husband - he is now sulking so I am just going to ignore the overgrown baby

got loads to do ... but apart from putting rubbish out and feed the kids not a lot else has been achieved - gonna grab a quick breakfast and come back and sit on my a*** just to annoy husband a little bit more lol!

the walking is def helping me - i actually think you lot on minimins are the best medicine!

as for big babies they are best left to sulk - and as for you putting rubbish out that is one of DH's jobs in this house :) I do come down to empty bins most mornings - unless he is running late

i don't think my husband even realises where the recycling bin is H lol! He had a go at me because he promised my brother in law he would help him on Good Friday weeks ago - since forgotten and now wants to go fishing instead so he threw a wobbly - I just feel like laughing in his face for being so mean - I told him he was being nasty and not to bother talking to me until he snapped out of it

so miserable here today - grey and freezing...so much for spring!
 
Believe it or not its international day of happiness today - tell him that

my dh likes to go fishing too - its his escape - I actively encourage it when I can as he really does need to get away with his own thoughts from time to time - but he also knows he has to fit it in round his other commitments

you can always secretly pray for rain on good friday :):):)

My Paul is an outdoors person - being stuck in all weekend always ends in an argument so a days fishing works perfect for us - Paul is very good (imo) fisherman and fishes competitively - so its a small source of income as well as his r&r. I am sure he is depressed H but he won't go to doctors cos he is v scared our gp will have a go at him over his weight (Pauls dad was massively overweight and v ill throughout his lifetime, died in his early 50s in 2009) so our gp always reminds Paul of this. I am so worried for Paul he def has sleep apnoea sometimes I lie in bed counting how long he stops breathing for and it terrifies me - I actually hit him and even that doesn't make him breathe! That's why it is so important that I stick to this diet for all of our sakes - I don't want to be a widow in my 50's and Noah will only be 11-12 and Meg barely an adult

Anyway he came home all full of apologies - so all sorted and noone went to bed on an argument thank goodness

Val - i was starting to get worrried about you - I cooked the apples in the oven - forgot all about them yesterday - have two more to heat up...that's pudding tonight sorted

So good news...have been sleep training Noah for the last week (with exception of when he was at my mother in laws Fri/Sat night) and Tuesday night and last night he slept right thru in his own bed from 7 and he is still alseep now - it is so nice to be back in my own bed comfortable rather than squished against the wall

Am loving my Hairy Bikers book - made their cottage pie (minus the topping) and served it over a baked potato with a bit of cheese...delish. Tonight I am going to make their Beef and Ale stew (I think Mitch recommended this one) can't wait...

Skinny Quiche...serves 4 at 231 Cals per serving
Paul been desperate for homemade quiche...so I threw this together last night

2x Filo Pastry = 165
3x medium eggs = 210
3oz Cheddar = 339
25g sliced chorizo = 114
Mixed Herbs 1tsp = 10
100ml semi skimmed = 74
1tsp english mustard = 10

Line dish, I used one sheet lengthways (folding the edges over) and then one sheet widthways - this went across the pie twice and then made folded the edges in
Place chorizo on top of pastry then sprinkle grated cheese evenly
Beat eggs, add milk and herbs, pour over quiche
Cook for about 25-30 mins - 180

Haven't tasted it yet (lunchtime!) but Paul said it was amazing

Obviously calories could be cut by using skimmed instead of semi, lean ham instead of chorizo - or leave the meat out and use mush, peppers, onions, sweetcorn etc...oh so want a slice lol!
