Fish cake recipes?

Hi I made some salmon cakes the other day, I literally got a salmon fillet, just cooked it through in a pan with frylight, made enough mash potato (without butter) to make around 12 cakes, added spoon full of sage, mixed it all together and coated in an egg and wholemeal breadcrumbs hexb

Hi Emsie

You can also start by poaching your fish ie. Haddock, Salmon or even use tinned tuna in spring water or brine.
Add a little mashed potato.
Add plenty of herbs or even curry powder etc. and season well.
You don't have to coat them in anything pop them on a baking tray lined with greese proff paper after shaping them & put them in the oven until hot, no need to worrie about anything being cooked through as the fish was pre cooked.
If they dont stick together use a little egg white to bind the mixture before shaping, there is hardly any fat or calories in the white unlike the yolk.

Smoked haddock or cod would be a nice twist, with a boiled egg chopped up and mixed in. For some reason the two flavours work really well together!
