Ginger and lemon grass sorbet

6 Stalks of lemon grass
65g/2 ½ oz fresh root ginger, unpeeled
8 Tbsp Granulated Sweetener
2 tbsp lemon juice, plus zest to decorate


  • Finely chop the lemon grass and grate the ginger.
  • Put the sweetener in a pan with 600ml/1 pint water and heat gently, stirring until it dissolves. Stir in the lemon grass, ginger and lemon juice, and leave until cold.
  • Sieve into a shallow freezer container. Freeze for about 3 hours or until the mixture is slushy and beginning to solidify around the edges. Transfer into a large bowl and whisk well until smooth.
  • Return to the container and freeze for about an hour. Whisk again. Repeat twice more then freeze until firm. Transfer to the fridge for about 45 minutes before serving so it starts to soften slightly. Serve in small glasses and top with sliced lemon rind.
