Syn free Lemon Curd :)

    Syn free lemon curd!

    2 Large eggs
    1 lemon (rind and juice)
    2 tbsp. Quark
    3 Tbsp sweetener (or to taste)


    1) Whisk eggs in a large bowl with lemon juice, then add rind and sweetener.
    2) Place over a pan of simmering water and whisk until it starts to thicken.
    3) Remove from heat and add quark and whisk until smooth.
    4) Leave it to cool then put it in a small jam jar and keep it in the fridge.

    It's nice with fruit or with a crushed meringue nest, or even just eaten with a spoon ;)

    Love that straight out the jar.

    I was thinking drizzle over natural yog make a change to fruit and yog on a morning.
    Ill have to make it first knowing my cooking the result could be variable lol

    I eat mine with a spoon straight from the jar, I'm not patient enough to spread it over some toast :) Planning on trying it on the half syn cake recipe with crumbled meringue at some point!

    Not really sure, I tend to eat all of it as soon as it has cooled lol!
