Grating 750g of carrots...

Takes a very very long time and a LOT of patience lol

I'm making a Carrot and Pesto lasagne which will be 3 syns plus a HexA of cheese on a green day - I had this in the 8th Day cafe in Manchester a while ago and it was lovely so making an adapted version.

Since it's got syns in I'll taste test it first before I go posting the recipe

Mmn it wasn't bad at all! Had it with some salad and some roasted veg done in balsamic vinegar left over from lunch
