Green/Extra Easy Carrot, coriander & lentil soup

Carrot, Coriander & Lentil Soup

This is out of the new magazine (Xmas 09). Had to make it and it is lush.

198g red lentils
1 onion, chopped
1 tsp ground coriander
450g carrots, peeled & chopped
2 pts water or veg stock

Put everything in a pan, bring to the boil and simmer until the veg and lentils are soft. Blitz with hand blender THEN season. Thin down if you want with extra water/stock.



Don't add salt while it cooks as it can toughen the lentils.
