Grilling vs. roasting meat??

I usually do green days but I've been throwing in some mix2max lately.

Can I roast or fry meat (in frylight obviously), or does it HAVE to be grilled? I had chicken wrapped in bacon with cheese last night & I roast it in the oven (no fat). It freaked me out seeing all the fat coming off it :eek: So for those of you who do mainly red...do you always grill??
 
I had the same meal on Saturday. I cut the fat off my bacon before wrapping it around the chicken and then just sprayed it lightly in fry light.
 
Was it definitely fat coming off? Many chicken breasts and bacon are pumped with a lot of water these days, so it could have been liquid rather than fat?

I do roast meat, I'll cut away any fat I can see and then drain off anything that comes out, (or use it for gravy for everyone else).
