Hi guys I recently Dukanized one of my fave soup recipes. I know it sounds wrong but trust me this is one delicious soup and perfect for Dukan PV days.
Ingredients:
4-5 rashers of smoked turkey bacon
one onion
one lettuce head (about 225 gr.)
300 ml low salt stock (made with water and stock cube or bullion veg powder)
200gr skimmed milk
one egg
100 ml fat free yoghurt
Directions:
Chop the bacon and onion and dry fry lightly. Add the water, stock, milk and simmer gently for 10-15 minutes. Shred the lettuce add to a blender along with the hot liquid and liquidise. Transfer back to the pan beat the yoghurt together with the egg and slowly stir into the hot soup. Ladle and serve immediately with extra yoghurt if you need it. It works well with any green leaves really, in the spring its amazing with wild sorrel picked from the banks of rivers. Enjoy
