I wouldn't use any - i would just marinate the fish in the other ingredients and then bake it. Often do this with all types of fish. Less syns this way.

Plain flour 1 level Tbsp = 3.5 syns
Breadcrumbs 28g = 5 syns

You could use breadcrumbs and count them as a HEXB.

I don't eat fish though so I can't give any further advice!

fish fillets are really nice baked with a teaspoon of pesto ( red or green) spread on top-pesto is quite low in syns
