i need to make a mushroom and quark sauce

Hi! i'm going to make this one today:

basic creamy pasta sauce
Serves:
1 or 2
Syns per serving:
Free on Original, Green and Extra Easy
ingredients
chopped onions
sliced mushrooms
mixed herbs
chopped clove of garlic
½ pint water
virtually fat free fromage frais or Quark
method
1.
Put the chopped onions, sliced mushrooms, herbs and garlic into a pan with the water. Bring to the boil and let simmer for quite a while until it is reduced and caramelised.
2. Let it cool a bit and then stir in the fromage frais or Quark. Make sure the vegetables are cool enough so as not to make the fromage frais curdle.
 
Does the quark really curdle if you mix it with something hot?! :eek: How cool should the veg be??
 
Try using the quark of fromage frais at room temp. It shouldnt split (fingers crossed)
