Puddings iced lemon cupcakes

Just made these and they where delish.

5 Eggs
7 Tablespoons Sweetner
Lemon essence
3 Lemons
2 Ounce Sr flour

1 ounce icing sugar

Mix whisk or blend eggs Sweetner and a few drops of lemon essence. Mix for about 10 mins and eggs mixture has trippled in size. Add flour and juice of 3 lemons plus rind of 1 lemon if wanted.

Pour into 12 cupcake cases.

Bake at 200" for around 12 mins.

Make up icing sugar with lemon essence.

12 Cupcakes at 1.3 syns each. Amazingly yummy. You could also make 6 double ones with syn free lemon curd middle xx

Crash away lol. Have to be left too cool tho or they taste eggy.... That's the hardest part lol xx

Get lemon extract as it is so much better then the essence - same goes for all flavourings

Yes essence does taste a little artificial and strong I agree extract is better. I always use vanilla extract. Got that tip off a cookery programme, James Martin I think (phew isnt he gorg)

so do we make the icing up with water and lemon extract or just lemon extract? bought some today so me and my daughter are gonna have a cupcake making day tomoro!! xxxx

This is amazing, I'm getting so many wonderful recipes, SW is brill, I love the fact that we are not limited.
All we do is change the way we buy, prepare, cook and now even bake!
