Ideas for left over stock

I bunged some beef and Jo's sausages into the slow cooker yesterday, with lots of veggies, tin of tomatoes and stock. Put in too much liqued so it was really runny but didn't want to add syns by adding cornflour, hence the meat got eaten with some of the stock, but I've got quite a bit of stock left over and it is yummy if rather runny! Any ideas what I could use if for on a red day? I'm green today and have tomorrows T already planned so I've put it in the freezer but would appreciate some ideas to use it for in future.

How about using it as the base for a soup? Roast some winter veg in the oven and then blitz it all together. If there's heaps of the stock, you could use some of it to cook up some rice or lentils (instead of just plain water) to thicken up the soup later on. Mmmm yummy comfort food... xx
 
Yeah - I would go for the soup idea. Just whack a load of veg in and blend it!
 
Yumm brilliant idea! Don't know why I didn't think of soup. Having a red day tomorrow so will take it out again for red day soup and add some more veggies and lean bacon. Thanks :D
